What's a good vegan recipe for a Valentine's Day dinner?

I've decided to make a nice candlelit dinner for Valentine's day for my fiance. this poses a couple challenges: First of all, I'm not the greatest cook. Secondly, he's vegan (but not too strict about it). I need a recipe for a delicious dinner that can be made with simple ingredients and techniques. the recipe can contain milk and eggs, but I'd like to keep these to a minimum if possible. Any vegans out there have any favorite recipes they'd like to share?

Here's an easy one.

Buy Gardenburger Riblet's (bake in the oven)
Serve with a vegetable, baked potato and a great salad.

Salad – Red Leaf lettuce, tomatoes, red or green onions, artichoke hearts, hearts of palm, green olives, cucumbers, raddishes (mix and match what you like). Favorite dressing. you can make veggie 1,000 Island with Nayonasise or Grapeseed Mayo, ketchup and relish.

If you can get figs…try this: Slice tomatoes, slice veggie cheese, basil and slice figs. Rinse figs in warm water and peel. Layer on a plate, tomato, cheese, basil, fig and sprinkle with olive oil and Balsamic Vinegar. Set to room temp.

Milk Shake

2 pkgs of Emergen C (orange or any flavor you like)
Mineral water
Scoop of Soylicious Soy ice cream
Rice Milk

Add packages to mineral water, then add ice cream and rice milk.

Easy recipes are my thing!

Appetizer[s]: bruschetta [you can buy fresh at Trader Joe's or most supermarkets] on sprouted grain bread, topped w/ hummus and drizzled w/ soy cheese.

Main dish: Pan sautee his favorite veggies and put them on a bed of whole wheat couscous and top with a vegan sauce of choice! [my favorites are pesto, or a Moroccon sauce: olive oil, cinammon, cumen and vegan butter]

Dessert: dark chocolate covered strawberries, or vegan cupcakes!

There are tons of good recipes online, I'll list one of my favorite blogs and you can check out some of the recipes there. Otherwise you can just google vegan recipes. Have a great Valentines day!

but here is an easy one I like

Make a stir fry, all kinds of veggies and near the end, add some ginger and soya sauce. if you have no ginger, add some garlic at the beginning.

A spinach salad…baby spinach…add some avocado and almonds, make a dressing with vinegar, hot mustard and olive oil.

heat up some bread and make some dill margarine or butter, that morning, add some dill to some butter and let it sit.

Fry some slices of tofu, then add an equal mixture of brown sugar, vinegar and ketchup, fry it with the tofu until it reduces and becomes sticky (sweet and sour tofu).

Then maybe some mashed potatos and just that is great too.

For dessert, make some heart cookies, or some pudding and fruit.

these are very easy recipes, and vegan (if you used vegan margerine and soy pudding), good luck :)

Here's some all-vegan (dairy and egg free) suggestions for Valentine's Day:

Main dish: you can cut and grill heart-shaped cut-out eggplant slices, topped with mushroom, onion and pepper stir-fry.

Salad: you can make a beet and carrot slaw… use a grater to grate beets and carrots and apples, mix with just a little apple cider vinegar and some agave nectar or cane sugar… you can steam and slice beets to garnish it, and make a heart-shaped beet cut-out.

Dessert: make a delicious dairy-free dark chocolate fondue by slowly melting dairy free dark chocolate chunks and then serving it with strawberries, raspberries, yellow cake and chocolate cake pieces… dip and eat… dip and share it with each other, in fact.
